IS JUICING YOUR GREENS as HEALTHY as EATING THEM?

No, juicing your greens is not nearly as healthy as eating them, provided that you use healthy cooking methods when you prepare the greens. For example, if you overcook the greens, you will lose too many of the nutrients they contain; in that case, you might be worse off than if you used a juicer. But as long as you use the healthy steaming or other cooking methods I describe in The World’s Healthiest Foods book, you’ll get a far greater variety of nutrients in the whole greens than in the juice.

ADEQUATE ZINC EASES PNEUMONIA in ELDERLY

A high proportion of nursing facility residents were found to have low serum (blood) zinc concentrations during an observational study funded by the Agricultural Research Service (ARS) and the National Institute on Aging. The scientists found that those with normal blood zinc concentrations were about 50 percent less likely to develop pneumonia than those with low concentrations…

FIG TARTS

⅔ lb dried figs
⅔ Tbsp raw honey
⅔ tsp lemon rind, grate
1⅓ cups boiling distilled water
1⅓ Tbsps orange rind, grate
8 unbaked tart shells

Wash figs and cut off any stems. Cover with boiling water and simmer for 30 minutes. Drain; reserve juice. Chop figs. Boil the juice until it is cooked down to one half (about 5 minutes). Add orange and lemon rinds, honey and figs. Mix thoroughly. Fill tart shells. Bake at 400°F for 30 minutes.

Serves 8.

EGGPLANT and OKRA

1 eggplant, un-peeled, chop
½ tsp Bragg Liquid Aminos soy
1 tsp Bragg Olive Oil
2 large tomatoes, dice
1 Tbsp bell pepper, chop
2 cups okra, slice
Parmesan cheese
2 cloves garlic, slice
⅓ cup chives or green onion tops
shake of Bragg Sprinkle

Sauté all of the ingredients except soy cheese, together in wok or pan for about 10-12 minutes, or until tender. Sprinkle with soy Parmesan cheese before serving.

Serves 4-6.
