BROILED BUTTON MUSHROOMS

8 large but­ton mush­rooms, fresh
dash of Bragg Liq­uid Aminos
2 Tbsps Bragg Organic Olive Oil
whole grain toast or lettuce

Wash mush­rooms and remove stem (save stems for soups). Place mush­rooms, cap side down in an oiled pan. Broil for three min­utes, about 3  inches below flame. Turn over mush­rooms and broil on the other side three more min­utes. Put olive oil and Liq­uid Aminos in each cap; broil until warm in cen­ter. Serve on whole-grain toast or a bed of shred­ded let­tuce. Serves 2–4.

COUSCOUS PACKETS

COUSCOUS PACKETS

½ cup dis­tilled water
pinch curry pow­der
⅓ cup cous­cous
1 tsp Bragg Olive Oil
2 Tbsps raisins or cur­rants
2 Tbsps toasted pine nuts
6 let­tuce or large spinach leaves, wash and dry

In a small bowl, soften cur­rants in warm dis­tilled water. Stir in cous­cous, olive oil, and curry pow­der. Let sit for 10 min­utes. Stir in pine nuts. Fill each spinach leaf with about 1 Tbsp of cous­cous and fold over sides to form a packet. Secure pack­ets with tooth­picks, if desired.

Serves 4–6.

Grind 1 cup pit­ted dates and 4 table­spoons nuts of choice. Blend using food proces­sor. Add enough fresh orange juice to make the mix­ture spread­able. A squeeze of fresh lemon juice reduces sweet taste if desired.

EGGPLANT — GARLIC BAKE

1 egg­plant
4 cloves gar­lic, slice
Bragg Organic Olive Oil
shake of Bragg Sprin­kle
Bragg Liq­uid Aminos
1 cup dis­tilled water

Cut egg­plant in half, stud with sliced gar­lic. Spray with Liq­uid Aminos and add Sprin­kle. Place in casse­role with water. Cover tightly, bake at 350°F for 40 min­utes or until soft. Vari­a­tion: last min­utes add diced toma­toes and grated soy cheese.

Serves 4.
