ONION SAUCE

ONION SAUCE

3 Tbsps onion, finely chop
¼ cup Bragg Organic Olive Oil

Work onion into olive oil. Replace chives for the onion for a more del­i­cate fla­vor; or, half of each can be used.
Makes 1/2 cups.

WILD RICE CASSEROLE

WILD RICE CASSEROLE

1½ cups wild rice
3 cups boil­ing dis­tilled water
Egg Replacer equal to 2 eggs
¼ cup Bragg Olive Oil
1 cup pars­ley, chop
1 red onion, mince
1 cup soy cheese grated
1 tsp Bragg Liq­uid Aminos
1 small can of mush­rooms with juice

Soak wild rice for 2 –3 hours. Cook in water for 30 min­utes. Drain. Beat in Egg Replacer with olive oil, adding oil slowly. Add chopped pars­ley, onion and soy cheese. Add Liq­uid Aminos and small can of mush­rooms with juice. Mix well and top with grated soy cheese. Bake 30–40 min­utes at 350°F.

Serves 4–6.

SOY LEMON BUNS

SOY LEMON BUNS

¾ cup luke­warm soy milk
¼ cup Bragg Organic Olive Oil
6 Tbsps raw honey
2 tsps organic lemon rind, grate
½ tsp mace
1 pkg quick-rise yeast
Egg Replacer equal to 2 eggs
3¼ cups whole-grain pas­try flour
½ lb soft tofu, crum­ble
½ cup organic raisins

Mix soy milk, olive oil, 4 table­spoons honey, organic lemon rind and mace. Add crum­bled yeast. Stir until dis­solved. Add half of the Egg Replacer and enough flour to make a soft dough. Turn onto floured board, knead until smooth—about 5 min­utes. Place in an oiled bowl; cover and let rise in a warm place (80-85°F) until light, or about 1 hour. Punch down; turn onto floured board and shape into balls 2–3 inches in diam­e­ter.
Place 2 inches apart in shal­low oiled pans. Cover with damp cloth; let rise. Mean­while, com­bine tofu, raisins, remain­ing 2 table­spoons honey and beaten Egg Replacer. When balls are dou­ble in size (about 30 min­utes), make a large dent with the back of a spoon in cen­ter of each roll, fill with raisin and tofu mixture.

Bake at 425°F for 15 minutes.

SWEET-POTATO PUDDING

SWEET-POTATO PUDDING

2 cups sweet pota­toes, grated
½ cup raw honey
Egg Replacer equal to 2 eggs
dash of anise seed
2 cups soy or rice milk
½ tsp nut­meg
4 Tbsps Bragg Organic Olive Oil
½ tsp cin­na­mon
½ cup stewed dried apri­cots
¼ tsp fresh gin­ger, grate
½ cup wal­nut meats, chop

Mix all ingre­di­ents; turn into oiled bak­ing dish and bake at 300°F for about 45 min­utes. Stir occasionally.

Serves 6.
