CARROTS WITH TURNIPS

CARROTS WITH TURNIPS

4 car­rots, slice
2 cloves gar­lic, mince
2 small red onions, chop
⅓ tsp Bragg Liq­uid Aminos
3 Tbsps soy cheese, grate
2 turnips, slice
3 Tbsps Bragg Olive Oil
½ tsp Bragg Sprin­kle
2 Tbsps pars­ley, chop
½ cup dis­tilled water

Wash car­rots and turnips thor­oughly, then slice. Place oil in a wok or pan with chopped onions and minced gar­lic. Cook slowly for 3 min­utes. Add car­rots and turnips, then Sprin­kle, Liq­uid Aminos and water. Cook very slowly. When car­rots and turnips are almost ten­der, add soy cheese and pars­ley. For deli­cious option add torn chard leaves last minute.

Serves 4.

SOY CHEESE SOUFFLÉ

2 Tbsps whole-grain or potato flour
4 Tbsps Bragg Organic Olive Oil
Egg Replacer equal to 4 eggs
⅛ tsp sweet basil
1 cup salt-free tomato juice
½ cup soy cheese, grate
½ tsp Bragg Liq­uid Aminos
shake of Bragg Sprinkle

Heat olive oil, add flour, stir over low heat for 3 min­utes. Add warm tomato juice, Liq­uid Aminos, basil, Sprin­kle and soy cheese. Stir until smooth and melted. Remove from stove and cool. Beat Egg Replacer and add to mix­ture. Turn into oiled casse­role dish, bake at 325°F for 30 min­utes. This will make the souf­flé very firm. If softer tex­ture is desired, decrease bak­ing time and increase oven temperature.

Serves 4.

FAJITAS

2 cups cooked pinto beans
1 onion, cut in strips
1 red pep­per, cut in strips
1 dozen corn tor­tillas
1 mild chili pep­per, cut in strips fresh cilantro, chop
1 zuc­chini, thin slice tomato salsa
1 tomato, cut in thin wedges soy cheese, grated
Bragg Organic Olive Oil

Sauté veg­eta­bles in olive oil until cooked. Heat beans. Heat tor­tillas. Assem­ble by plac­ing 3 cup beans in a tor­tilla and
top­ping with cooked veg­eta­bles, salsa and cilantro. Serves 6.
