PERSIAN BONBONS

1 lb dates
1 lb nut meats
1 lb raisins
1 cup shred­ded, dried, unsweet­ened coconut

Use fresh, moist fruit. Run all ingre­di­ents through a grinder and knead as for a dough. Pat out on a coconut cov­ered board, cut with small cookie cut­ter, and roll in coconut. Wrap in waxed paper when dry.

MUSHROOM BURGERS

1 small onion, finely chop
Egg Replacer equal to 1 egg
Bragg Organic Olive Oil
2 cups mush­rooms, finely chop
1 tsp Bragg Liq­uid Aminos
1 cup whole-grain bread crumbs

Mix all ingre­di­ents well and form into small burg­ers. Sauté in olive oil, turn­ing until brown on both sides.

Serves 6–8.

GREEN CABBAGE

When cook­ing cab­bage, remove tough or bruised outer leaves (save for soup stock). But not too many because out­side leaves con­tain more vit­a­mins and food value. Remove tough end stalk.

Slice finely, put in oiled bak­ing dish, cover with whole-grain bread crumbs and 4 cup Cab­bage (raw) has amaz­ing prop­er­ties. It stim­u­lates the immune sys­tem, kills bac­te­ria and viruses, heals ulcers, and accord­ing to Dr. James Balch in Pre­scrip­tion for Dietary Well­ness, your chances of con­tract­ing colon can­cer can be reduced by up to 60% by eat­ing raw cab­bage weekly. Dr. Saxon-Graham states that those who never con­sumed cab­bage were three times more likely to develop colon cancer.

A Japan­ese Study shows peo­ple who ate raw cab­bage had the low­est fatal­ity rate from any can­cer. Ther­a­peu­tic ben­e­fits have also been attrib­uted to raw cab­bage in rela­tion to scurvy, gout, rheuma­tism (arthri­tis), eye dis­eases, asthma, pyor­rhea, and gangrene.

We add raw cab­bage to sal­ads and even make sand­wiches wrapped in cab­bage leaves instead of bread. These cab­bage wraps are so delicious!

DANDELION SALAD

½ head of leaf let­tuce, tear
½ head romaine let­tuce, tear
½ cup dan­de­lion leaves, tear
¼ cup dan­de­lion stems, chop
a few fresh mint leaves
½ cup apple, grated (optional)
Bragg Healthy Organic Vinai­grette or Gin­ger & Sesame Dressing

Toss all torn leaves, dan­de­lion stems, mint and grated apple together with Bragg Vinai­grette or Gin­ger Dressing.

Serves 4.
