STUFFED BAKED POTATOES

STUFFED BAKED POTATOES

Bake three large russet potatoes at 400°F for one hour. When one, cut in half, scoop out up to 4 inch of the skin. Place the scooped out portion in a mixing bowl and add:

3 Tbsps Bragg Organic Olive Oil

½ cup green onions, finely chop

1 cup soy cheese, grate

shake of Bragg Sprinkle

Combine and mash potato-onion mixture. Spoon into the half potato shells; add Sprinkle on top. Heat in 375°F oven for 10 minutes to allow cheese to melt. Serves 6.

HEALTH-BAKED FRENCH FRIES

5 large white potatoes

Spray of Bragg Liquid Aminos

5 Tbsps Bragg Organic Olive Oil

shake of Bragg Sprinkle

Cut potatoes lengthwise into long strips. Arrange in baking pan so they don’t overlap. Pour olive oil and shake Sprinkle over them. Bake 450°F for 30 minutes or until tender, turning occasionally. Spray with Liquid Aminos and top with nutritional large yeast flakes. Serves 4.

ZESTY POTATO CASSEROLE

ZESTY POTATO CASSEROLE

2 cups raw potatoes, slice

2 Tbsps Bragg Olive Oil

½ tsp Bragg Sprinkle

¼ cup parsley, chop

1 clove garlic, slice

1 cup can or fresh tomatoes

¼ cup distilled water

1 cup soy Parmesan cheese, grate

Alternate layers of potatoes and tomatoes in casserole dish. Combine olive oil, water, Sprinkle, garlic and parsley. Pour over potatoes and tomatoes. Cover, bake at 375°F for 30 minutes, until potatoes are tender. Top with soy Parmesan cheese. Serves 3.

POTATOES STUFFED WITH SOY CHEESE

POTATOES STUFFED WITH SOY CHEESE

3 large potatoes

Seasonings of your choice

¼ lb soy cheese, grate

Scrub and dry potatoes. Use apple corer to remove center of each potato. Fill each center cavity with soy cheese and seasonings of choice. Plug ends with pieces of remaining potato. Bake at 400°F until tender, 30-45 minutes. Serves 3.
