Today on Health & Longevity, Dr. John Westerdahl features guest, Estelle Foster, Co-Founder and Publisher of Going Organic Magazine. Estelle is the multi-awarded Executive Director of Pesticide Awareness and Alternative Coalition (PAAC), a non-profit, environmental group in Santa Barbara that established over 40 toxic pesticide free parks. PAAC has produced five California Organic Festivals, published 25,000 bi-lingual Organic Resource Guides, and co-created a City and Community IPM Advisory Board. MOLASSES – BAKED SOYBEANS

2 cups dried soybeans
⅓ tsp Bragg Sprinkle
½ bell pepper, chop
1 Tbsp raw honey
1 small red onion, chop
1 Tbsp Bragg Liquid Aminos
2 Tbsps Bragg Olive Oil
2 cups liquid from cooked soybeans or distilled water
2 Tbsps blackstrap molasses

Soak soybeans overnight. Cook on stove top or oven until tender (See instruction below). Sauté onion and bell pepper in olive oil until tender. Combine ingredients in mixing bowl, transfer to covered casserole dish. Bake covered for 1 hour in preheated 350°F oven. Remove cover, bake 20 minutes or until done, stirring occasionally. Garnish with nutritional yeast flakes.

Serves 4-5.

COOKING DRIED SOYBEANS
Soak the soybeans overnight. In the morning, drain and wash again. Drain and add boiling water three times the original amount of soybeans (example: 1 cup dry beans to 3 cups of water). Simmer at least two hours, or overnight in a crockpot. Soybeans will not cook into a soft, mushy mass. They will remain firm and hold their shape better than other dry beans.

RHYTHM SALAD

RHYTHM SALAD

¾ cup stewed prunes
¼ cup raisins or currants
¾ cup stewed apricots
1 cup cabbage, slice
3 apples, core, chop
lemon tofunaise (see below), to taste
½ cup raw carrots, shred
¼ cup peanuts or pine nuts, chop

Remove pits from stewed prunes and apricots, then slice; mix with apples, shredded carrots, raisins or currants and sliced cabbage. Toss with lemon tofunaise or Veganaise. Sprinkle chopped peanuts or raw pine nuts over the top.

Serves 4-6.

LEMON TOFUNAISE

2 cups Bragg Organic Olive Oil
1 tsp mustard powder
½ cup freshly squeezed lemon juice
¼ cup soft tofu
shake of Bragg Sprinkle
shake of Bragg Kelp

Combine mustard powder, Bragg Sprinkle and Bragg Kelp with tofu in mixing bowl. Beat together until stiff. Add part of the olive oil, beating it into the mixture drop by drop at first, then proceeding more rapidly, keeping the mixture firm. When it begins to thicken, add a little lemon juice alternately with the remaining olive oil.

Makes 2 1/2 cups.
