COUSCOUS PACKETS
½ cup distilled water
⅓ cup couscous
2 Tbsps raisins or currants
6 lettuce or large spinach leaves, wash and dry
pinch curry powder
1 tsp Bragg Olive Oil
2 Tbsps toasted pine nuts
In a small bowl, soften currants in warm distilled water. Stir in couscous, olive oil, and curry powder. Let sit for 10 minutes. Stir in pine nuts. Fill each spinach leaf with about 1 Tbsp of couscous and fold over sides to form a packet. Secure packets with toothpicks, if desired. Serves 4–6.
