1 eggplant, un-peeled, chop
½ tsp Bragg Liquid Aminos soy
1 tsp Bragg Olive Oil
2 large tomatoes, dice
1 Tbsp bell pepper, chop
2 cups okra, slice
Parmesan cheese
2 cloves garlic, slice
⅓ cup chives or green onion tops
shake of Bragg Sprinkle
Sauté all of the ingredients except soy cheese, together in wok or pan for about 10–12 minutes, or until tender. Sprinkle with soy Parmesan cheese before serving.
