CARROT, APPLE & RAISIN SALAD

CARROT, APPLE & RAISIN SALAD

½ cup fresh or dried coconut,
grate ½ cup raisins or currants
½ cup raw almonds, slice (optional)
4 cups carrots, grate
¼ cup fresh lemon or orange juice
1¼ tsp raw honey
3-4 apples, core, chop

Mix carrots and apples with fresh lemon or orange juice and honey. Add coconut, almonds and raisins or currants. Mix thoroughly.

Serves 4-6.

APPLE – CINNAMON SAUCE

APPLE – CINNAMON SAUCE

¾ cup organic apple juice
¼ cup distilled water
⅛ tsp cinnamon powder
2 Tbsps kudzu root starch

Place all ingredients in saucepan, mix well, and bring to boil over medium heat, stirring constantly to avoid lumping. Just as boiling occurs, mixture turns into a clear, shiny sauce. Allow to cool. For use over a fresh fruit compote or fruit salad.

SPINACH, APPLE and RED ONION SALAD

SPINACH, APPLE AND RED ONION SALAD

1-2 bunches of spinach, tear
½ tsp Bragg Liquid Aminos
1 apple, core, chop
shake of Bragg Sprinkle
1 red onion, slice thin
3 Tbsps Bragg Organic Olive Oil
raw honey (optional)
3 Tbsps freshly squeezed lemon juice
3 cloves garlic, mincec

For dressing: combine garlic, lemon juice, olive oil, Liquid Aminos, honey (optional) and Sprinkle. In salad bowl, toss spinach, onion and apples and add this dressing.

Serves 4.
