ARTICHOKES WITH GARLIC & HERBS

4 artichokes
3 Tbsps fresh squeezed lemon juice
¼ cup Bragg Organic Olive Oil
4 cloves garlic, slice
1 tsp Bragg Liquid Aminos
⅓ tsp Bragg Sprinkle

Wash artichokes thoroughly. Cut one inch off the tops. Remove stems. Place sliced garlic between the leaves of the artichokes. Mix Sprinkle, olive oil, Liquid Aminos and lemon juice and sprinkle over artichokes. Stand artichokes on end in a saucepan using steamer basket. Steam for 30 minutes or until tender.

Serve hot or cold, whole or halved, with tofunaise (see recipe below).

Serves 4-8.

TOFUNAISE
¼ cup dis­tilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprin­kle
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon
1 tsp turmeric (optional for color)

Blend all ingre­di­ents in blender until smooth. Yields 2 cups.

PEAS WITH LETTUCE and HERBS

PEAS WITH LETTUCE AND HERBS

4 cups shelled tender green peas
3 Tbsps Bragg Organic Olive Oil
1 small head romaine lettuce
¼ cup scallions, mince
1 tsp raw honey
¼ cup parsley, chopped
⅓ tsp of Bragg Sprinkle (24 herbs & spices)

Heat olive oil in heavy skillet. Lay romaine leaves on bottom of pan. Place peas, scallions, Sprinkle, parsley and honey over peas, well-distributed. Cover entire mixture with romaine leaves. Cover and simmer over low heat, adding 4 cup water when necessary to avoid dryness. Cook until peas are tender. Add more oil just before serving.

Serves 6.

Chinese Herbal Medicines for Preventing Diabetes in High Risk People

More research is required to establish whether Chinese herbal medicines can reduce the likelihood of developing diabetes, according to Cochrane Researchers. Although herbal medicines are widely used in Asian countries to treat pre-diabetes (impaired glucose tolerance or IGT), the precursor of the disease, researchers say there is still not enough hard scientific evidence to confidently recommend their use.
