PASTA WITH BASIL (PESTO) SAUCE

1 lb pasta
1 tsp Bragg Liquid Aminos
36 basil leaves
½ cup Bragg Organic Olive Oil
3 cloves garlic
1 cup hard soy cheese, grate
½ cup pine nuts
⅓ tsp Bragg Sprinkle

To make sauce, wash and thoroughly dry basil leaves. Place clean, dry leaves in food processor with garlic. Add nuts, cheese and olive oil while processor is running. Add Liquid Aminos and Sprinkle. Meanwhile, cook pasta. Place the pasta on a dish and drizzle sauce over pasta. Spray over top with Liquid Aminos and sprinkle of nutritional yeast. Serves 4-6.

PASTA WITH SOY CHEESE and WALNUTS

PASTA WITH SOY CHEESE AND WALNUTS

1 lb pasta 3
Tbsp Bragg Olive Oil
3 cloves garlic, mince
¼ tsp Bragg Sprinkle
1 cup walnuts, chop
1 cup soy cheese, grate

Lightly sauté garlic in olive oil. Then add chopped walnuts to garlic and oil mixture. Stir for 10 minutes. Remove from heat. Cook the pasta. Toss drained pasta with grated soy cheese and walnut sauce.

Serves 4-6.

PASTA WITH PEANUT SAUCE

PASTA WITH PEANUT SAUCE

12 oz pasta of choice
1 tsp ginger, mince
1 cup distilled water
1 Tbsp raw honey
3 green onions, mince
shake of Bragg Sprinkle
2 to 3 cloves garlic, mince
⅔ cup creamy peanut butter
1 Tbsp Bragg Liquid Amino
2 Tbsps Bragg Apple Cider Vinegar

Cook pasta. While pasta is cooking, whisk together remaining ingredients in saucepan. Heat slowly until sauce is smooth and slightly thickened. Add more water if sauce becomes too thick. When pasta is tender, drain and toss with sauce.

Serves 6.

RAVIOLI WITH WALNUTS

RAVIOLI WITH WALNUTS

36 vegetarian ravioli or 1 lb whole-grain pasta
½ cup soy milk
1 cup shelled walnuts
½ cup soy cheese, grate
2 Tbsp Bragg Organic Olive Oil
Bragg Liquid Aminos to taste
Bragg Sprinkle to taste

Chop nuts, add soy cheese, soy or rice milk, and olive oil to make a sauce. Add Sprinkle and Liquid Aminos to taste. Cook ravioli or pasta. Drain and coat with the sauce.

Serves 4-6.

PASTA WITH GARBANZO SAUCE

PASTA WITH GARBANZO SAUCE

1 lb pasta, any shape
2 cups cooked garbanzo beans, mash
1 Tbsp Bragg Olive Oil 2 stalks celery, dice
1 red onion, dice
1 tsp Bragg Liquid Aminos
2 cloves garlic, mince
pinch cayenne, to taste
½ tsp Bragg Sprinkle
1 cup tomato sauce (see recipe below)

While pasta cooks, sauté onion, garlic and celery in olive oil until golden. Add cooked, mashed garbanzo beans, tomato sauce, Sprinkle, Liquid Aminos and spices and simmer 10 minutes. Toss with cooked pasta, garnish with nutritional yeast flakes, parsley or basil.

TOMATO SAUCE

2 cups cooked tomatoes, with juice
1 Tbsp raw honey
½ cup onions, finely chop, sauté
½ tsp Bragg Liquid Aminos
½ cup green pepper, chop
shake of Bragg Kelp
1 cup tomatoes, finely chop
1 tsp Bragg Sprinkle
1 Tbsp Bragg Organic Olive Oil
3 garlic cloves, crush

Place juice from 2 cups cooked tomatoes in sauce pan with sautéed onions and chopped pepper. Bring to a boil and let simmer, stirring occasionally, until volume is reduced by half. Add all remaining ingredients. Let simmer briefly or until mixture is thick.

Serves 4-6.

BROCCOLI and PINE NUT PASTA

12 oz pasta
1 lb broccoli
pinch of cayenne
2 Tbsps pine nuts
½ tsp Bragg Liquid Aminos
3 cloves garlic, mince
1 Tbsp Bragg Organic Olive Oil
28 oz can crushed tomatoes
shake of Bragg Sprinkle (24 herbs & spices)

Cook pasta. Drain. Steam broccoli for 4 minutes. Set aside. Sauté garlic, cayenne and pine nuts in olive oil in large skillet for 1 minute, add tomatoes and cook over medium heat 5-10 minutes. Stir in steamed broccoli. Serve over cooked pasta.

Add Sprinkle, Liquid Aminos and yeast flakes over top. Serves 6.

BEET and PASTA SALAD With TOFUNAISE

8 oz whole-grain pasta shells, cook
⅔ cup pine, hazel or walnuts, chop
3 Tbsps Bragg Organic Apple Cider Vinegar
Bragg Liquid Aminos (to taste)

DRESSING:
2 tsps soy milk
2 tsps horseradish
4 Tbsps tofunaise (see recipe below)
2 uncooked beets
3 scallions, slice
2 celery stalks, chop
⅓ cup raisins or currants
1 apple, core and slice

GARNISH:
curly leaf lettuce
watercress
2 ripe avocados, slice

Halve beets, cook in steamer basket 15 minutes. Drain, cool, and chop. Cook pasta; drain and toss with vinegar and Liquid Aminos. Cool mixture. Mix pasta with beets, celery, onions, nuts and apples. Add raisins (optional). Stir all ingredients and dressing together and mix into salad bowl. Chill. To serve, place salad in the center of the lettuce and
top with avocado slices and watercress. Serves 4-6.

TOFUNAISE
¼ cup distilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprinkle
1 tsp turmeric (optional for color)
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon

Blend all ingredients in blender until smooth.  Yields 2 cups
