ZESTY POTATO CASSEROLE

ZESTY POTATO CASSEROLE

2 cups raw potatoes, slice
1 clove garlic, slice
2 Tbsps Bragg Olive Oil
1 cup can or fresh tomatoes
½ tsp Bragg Sprinkle
¼ cup distilled water
¼ cup parsley, chop
1 cup soy Parmesan cheese, grate

Alternate layers of potatoes and tomatoes in casserole dish. Combine olive oil, water, Sprinkle, garlic and parsley. Pour over potatoes and tomatoes. Cover, bake at 375°F for 30 minutes, until potatoes are tender. Top with soy Parmesan cheese.

Serves 3.

TOFU POTATO SALAD

5 cooked potatoes with skins, dice
2 cups firm tofu, crumble
2 stalks celery, dice
1 red onion, dice
1 Tbsp tofunaise (see recipe below)
2 tsps Bragg Liquid Aminos
2 Tbsps Bragg Apple Cider Vinegar
1 tsps raw honey (optional)
2 green peppers, dice

Combine ingredients. Refrigerate until ready to serve.

Serves 8.

TOFUNAISE
¼ cup distilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprinkle
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon
1 tsp turmeric (optional for color)

Blend all ingredients in blender until smooth. Yields 2 cups.
