“CHILI NON CARNE” (CHILI WITHOUT MEAT)

Patricia’s veg­e­tar­ian ver­sion of “chile con carne”…

1¼ cups dry kid­ney beans dis­tilled water (to cover beans)
½ onion, mince
1 tsp Bragg Liq­uid Aminos
3 cloves gar­lic, mince
2 Tbsps green pep­per, chop
2½ Tbsps Bragg Olive Oil
½ tsp chili pow­der
3 cups toma­toes, dice
1 cup tex­tured veg­etable protein

Wash and soak kid­ney beans sev­eral hours or overnight. Drain water and rinse beans. Add fresh water and cook about 12 hours, until ten­der. Sauté onion and green pep­per in olive oil until ten­der. Add tex­tured veg­etable pro­tein soaked in water and stir until sep­a­rated and browned. Add toma­toes, Liq­uid Aminos, chili pow­der and gar­lic. Cook about 1 hour on low heat. Add pre­cooked kid­ney beans and cook an addi­tional 10–15 min­utes. Add more chili pow­der to taste. Serves 6–8.

BUCKWHEAT WAFFLES

BUCKWHEAT WAFFLES

1½ cups whole-grain pas­try flour
¼ cup buck­wheat flour
1 cup soy milk or soy yogurt
¼ cup raw wheat germ
Egg Replacer equal to 2 eggs
½ tsp brown rice syrup
4 Tbsps Bragg Organic Olive Oil
1 tsp bak­ing powder

Sift whole-grain and buck­wheat flour, wheat germ and bak­ing pow­der together in large mix­ing bowl. Beat Egg Replacer; add rice syrup and mix with dry ingre­di­ents. Add soy milk (or soy yogurt) grad­u­ally and beat vig­or­ously until bat­ter is thin. Add olive oil last. Bake on a hot oiled waf­fle iron until golden brown, 3–5 min­utes for crisp waf­fles. Serves 2–4.

PATÉ OF SEEDS

1 cup raw pump­kin seeds
1 cup raw sun­flower seeds
1 medium red onion, chop
1 tsp Bragg Liq­uid Aminos
½ cup basil, chop
shake of Bragg Sprinkle

Soak pump­kin and sun­flower seeds for 6–12 hours. This gives them the desired taste and tex­ture. It also starts the sprout­ing process, which improves the nutri­tional value of the seeds and aids diges­tion. Drain, rinse thor­oughly, and drain again. Put the soaked seeds and all the remain­ing ingre­di­ents in a food proces­sor fit­ted with a metal blade. Process until smooth. Mound the paté in the cen­ter of a serv­ing dish, cover, and refrig­er­ate for at least 1 hour before serv­ing. This paté will keep up to 2 days in the refrig­er­a­tor. Makes 2 cups.

HI-PROTEIN RAW NUT ICE CREAM

½ cup raw sun­flower seed ker­nels
2 cups soy milk
½ cup raw sesame seeds
1 cup raw almonds
½ cup raw honey
1 cup raw pecans
¼ cup Bragg Organic Olive Oil

Mix all the ingre­di­ents together and blend in an elec­tric blender in batches until it has a smooth con­sis­tency. Pour this mix­ture into ice cube trays and freeze until solid. Serves 6–8.

FRESH STRAWBERRY SPONGE

FRESH STRAWBERRY SPONGE

¼ cup hot dis­tilled water Egg Replacer equal to 1 egg
½ cup straw­ber­ries, juice and pulp
¼ cup raw honey
½ Tbsp arrow­root pow­der
½ Tbsp fresh lemon juice
¼ cup soy cream or non-dairy berries for gar­nish
whip cream for garnish

Crush organic straw­ber­ries; add honey, allow to stand 30 min­utes. Dis­solve arrow­root in water, add to straw­ber­ries and lemon juice. Cool. When it starts to thicken, fold in whipped soy cream and Egg Replacer. Put in sher­bet glasses. Chill. Gar­nish with berries, deli­cious non-dairy cream or non-dairy yogurt (rice, soy or nut creams) if desired. Serves 3.

SESAME SEED PROTEIN DELIGHTS

½ cup sun­flower seed meal
¾ cup tahini (sesame seed but­ter)
½ cup finely ground nat­ural unsweet­ened unprocessed coconut

Mix all ingre­di­ents together. Sep­a­rate into 2 por­tions. Place each on a piece of wax paper and form into a 1-inch roll. Wrap in the wax paper and store in the refrig­er­a­tor. When ready to serve, slice into 12-inch pieces.

Economy No Meat Hamburgers

Econ­omy No Meat Hamburgers

Egg Replacer equal to 2 eggs
1 tsp Bragg Liq­uid Aminos
½ cup wal­nuts, mince
½ tsp Bragg Sprin­kle
1 cup raw oat­meal
2 cloves gar­lic, press
½ cup dis­tilled water
2 Tbsps Bragg Olive Oil
½ cup red onions, mince pinch poul­try seasoning

Com­bine Egg Replacer, wal­nuts, oat­meal, water, onion, Liq­uid Aminos, Sprin­kle and gar­lic. Mix well and form into pat­ties. Cook in olive oil for 15 min­utes on both sides. Serves 4.

BLENDED MEAL WAFFLES OR PANCAKES

1 cup whole-grain sifted flour
1 cup blended grain meal
2 tsps bak­ing pow­der
1 tsp brown rice syrup
Egg Replacer equal to 2 eggs
1¼ cups soy milk
3 Tbsps Bragg Organic Olive Oil
2 ripe bananas (optional)

Sift flour before mea­sur­ing. Mix with blended meal, bak­ing pow­der, olive oil and brown rice syrup. Beat Egg Replacer well. Add soy milk. Com­bine with flour mix­ture; beat until smooth. For vari­ety, add mashed ripe bananas. Bake in hot waf­fle iron or cook as pan­cakes. Makes 6 portions.

Gourmet Mixed Green Salads

The mixed green sal­ads offered in restau­rants are often less nutri­tious and less fla­vor­ful than desired. Here is a healthy mixed green salad that will delight any salad gourmet. All leaves should be thor­oughly washed, dried and crisped in a cool place, then torn into small pieces. It’s best not to cut the leaves with a knife or kitchen shears.

1 cup green leaf let­tuce, tear
½ cup esca­role
1 cup mixed baby let­tuce leaves
1 cup purslane
¼ cup dan­de­lion greens
1 cup sor­rel leaves
½ cup young, spinach leaves
¼ cup chives, chop
½ cup fresh mint leaves
1 cup romaine let­tuce
1 cup water­cress olives, sliced (optional)

Toss all greens with Bragg Organic Vinai­grette Dress­ing; add some sliced black olives, if desired, before toss­ing with dress­ing. It is dif­fi­cult to assem­ble all these greens at one time, but the trick of this salad is to use as many leafy greens as you can pos­si­bly obtain. Add cherry toma­toes, arti­choke hearts, and any other healthy addi­tions desired. Serves 6.

BEAN SPREAD

Com­bine cooked beans of your choice with chopped onion, minced pars­ley, tofu­naise (page 139). Blend into a spread for dips, sand­wiches or stuff­ings. When mak­ing sand­wiches, pre­pare open face with a let­tuce leaf or cab­bage leaf on top.

NUT BUTTER AND VEGETABLE SPREAD

Com­bine grated or ground raw car­rots, cel­ery, and onions with nut but­ter of choice. Sea­son to taste.
