“CHILI NON CARNE” (CHILI WITHOUT MEAT)
Patricia’s vegetarian version of “chile con carne”…
1¼ cups dry kidney beans distilled water (to cover beans)
½ onion, mince
1 tsp Bragg Liquid Aminos
3 cloves garlic, mince
2 Tbsps green pepper, chop
2½ Tbsps Bragg Olive Oil
½ tsp chili powder
3 cups tomatoes, dice
1 cup textured vegetable protein
Wash and soak kidney beans several hours or overnight. Drain water and rinse beans. Add fresh water and cook about 12 hours, until tender. Sauté onion and green pepper in olive oil until tender. Add textured vegetable protein soaked in water and stir until separated and browned. Add tomatoes, Liquid Aminos, chili powder and garlic. Cook about 1 hour on low heat. Add precooked kidney beans and cook an additional 10–15 minutes. Add more chili powder to taste. Serves 6–8.

BUCKWHEAT WAFFLES
1½ cups whole-grain pastry flour
¼ cup buckwheat flour
1 cup soy milk or soy yogurt
¼ cup raw wheat germ
Egg Replacer equal to 2 eggs
½ tsp brown rice syrup
4 Tbsps Bragg Organic Olive Oil
1 tsp baking powder
Sift whole-grain and buckwheat flour, wheat germ and baking powder together in large mixing bowl. Beat Egg Replacer; add rice syrup and mix with dry ingredients. Add soy milk (or soy yogurt) gradually and beat vigorously until batter is thin. Add olive oil last. Bake on a hot oiled waffle iron until golden brown, 3–5 minutes for crisp waffles. Serves 2–4.

PATÉ OF SEEDS
1 cup raw pumpkin seeds
1 cup raw sunflower seeds
1 medium red onion, chop
1 tsp Bragg Liquid Aminos
½ cup basil, chop
shake of Bragg Sprinkle
Soak pumpkin and sunflower seeds for 6–12 hours. This gives them the desired taste and texture. It also starts the sprouting process, which improves the nutritional value of the seeds and aids digestion. Drain, rinse thoroughly, and drain again. Put the soaked seeds and all the remaining ingredients in a food processor fitted with a metal blade. Process until smooth. Mound the paté in the center of a serving dish, cover, and refrigerate for at least 1 hour before serving. This paté will keep up to 2 days in the refrigerator. Makes 2 cups.

HI-PROTEIN RAW NUT ICE CREAM
½ cup raw sunflower seed kernels
2 cups soy milk
½ cup raw sesame seeds
1 cup raw almonds
½ cup raw honey
1 cup raw pecans
¼ cup Bragg Organic Olive Oil
Mix all the ingredients together and blend in an electric blender in batches until it has a smooth consistency. Pour this mixture into ice cube trays and freeze until solid. Serves 6–8.

FRESH STRAWBERRY SPONGE
¼ cup hot distilled water Egg Replacer equal to 1 egg
½ cup strawberries, juice and pulp
¼ cup raw honey
½ Tbsp arrowroot powder
½ Tbsp fresh lemon juice
¼ cup soy cream or non-dairy berries for garnish
whip cream for garnish
Crush organic strawberries; add honey, allow to stand 30 minutes. Dissolve arrowroot in water, add to strawberries and lemon juice. Cool. When it starts to thicken, fold in whipped soy cream and Egg Replacer. Put in sherbet glasses. Chill. Garnish with berries, delicious non-dairy cream or non-dairy yogurt (rice, soy or nut creams) if desired. Serves 3.

SESAME SEED PROTEIN DELIGHTS
½ cup sunflower seed meal
¾ cup tahini (sesame seed butter)
½ cup finely ground natural unsweetened unprocessed coconut
Mix all ingredients together. Separate into 2 portions. Place each on a piece of wax paper and form into a 1-inch roll. Wrap in the wax paper and store in the refrigerator. When ready to serve, slice into 12-inch pieces.

Economy No Meat Hamburgers
Egg Replacer equal to 2 eggs
1 tsp Bragg Liquid Aminos
½ cup walnuts, mince
½ tsp Bragg Sprinkle
1 cup raw oatmeal
2 cloves garlic, press
½ cup distilled water
2 Tbsps Bragg Olive Oil
½ cup red onions, mince pinch poultry seasoning
Combine Egg Replacer, walnuts, oatmeal, water, onion, Liquid Aminos, Sprinkle and garlic. Mix well and form into patties. Cook in olive oil for 15 minutes on both sides. Serves 4.

BLENDED MEAL WAFFLES OR PANCAKES
1 cup whole-grain sifted flour
1 cup blended grain meal
2 tsps baking powder
1 tsp brown rice syrup
Egg Replacer equal to 2 eggs
1¼ cups soy milk
3 Tbsps Bragg Organic Olive Oil
2 ripe bananas (optional)
Sift flour before measuring. Mix with blended meal, baking powder, olive oil and brown rice syrup. Beat Egg Replacer well. Add soy milk. Combine with flour mixture; beat until smooth. For variety, add mashed ripe bananas. Bake in hot waffle iron or cook as pancakes. Makes 6 portions.

Gourmet Mixed Green Salads
The mixed green salads offered in restaurants are often less nutritious and less flavorful than desired. Here is a healthy mixed green salad that will delight any salad gourmet. All leaves should be thoroughly washed, dried and crisped in a cool place, then torn into small pieces. It’s best not to cut the leaves with a knife or kitchen shears.
1 cup green leaf lettuce, tear
½ cup escarole
1 cup mixed baby lettuce leaves
1 cup purslane
¼ cup dandelion greens
1 cup sorrel leaves
½ cup young, spinach leaves
¼ cup chives, chop
½ cup fresh mint leaves
1 cup romaine lettuce
1 cup watercress olives, sliced (optional)
Toss all greens with Bragg Organic Vinaigrette Dressing; add some sliced black olives, if desired, before tossing with dressing. It is difficult to assemble all these greens at one time, but the trick of this salad is to use as many leafy greens as you can possibly obtain. Add cherry tomatoes, artichoke hearts, and any other healthy additions desired. Serves 6.

BEAN SPREAD
Combine cooked beans of your choice with chopped onion, minced parsley, tofunaise (page 139). Blend into a spread for dips, sandwiches or stuffings. When making sandwiches, prepare open face with a lettuce leaf or cabbage leaf on top.
NUT BUTTER AND VEGETABLE SPREAD
Combine grated or ground raw carrots, celery, and onions with nut butter of choice. Season to taste.
