September 7th is National Acorn Squash Day

National Day Calendar

National Acorn Squash Day is observed annually on September 7th.  This day celebrates the food holiday of a winter squash that is also known to some as a pepper squash. Even though it is considered a winter squash, acorn squash belongs to the same species as all summer squashes including zucchini and yellow crookneck squash.

SQUASH SURPRISE

1½ lbs summer squash or zucchini
2 large tomatoes, chop
½ tsp Bragg Liquid Aminos
pinch dill seeds
1 red onion, chop
shake of Bragg Sprinkle

Cut and mix ingredients. Cook 10 minutes until tender. Variation: Add torn chard, kale, or greens of choice. Serve in bowls with liquids.

Serves 6.

SQUASH and LIMA BEANS

SQUASH AND LIMA BEANS

3 cups lima beans, fresh or frozen
shake of Bragg Kelp
2 cups boiling distilled water
3 Tbsps whole-grain flour
6 cups squash or zucchini, slice
¾ tsp paprika
1 tsp Bragg Liquid Aminos
3 Tbsps Bragg Olive Oil
¾ cup red onion, mince
½ tsp Bragg Sprinkle

Combine lima beans, Liquid Aminos, seasonings and boiling water in pan. Cover. Bring to boil, cook until tender. Add thinly sliced squash. Continue cooking (covered) for 10 more minutes until tender, stirring occasionally. Drain, reserve liquid. Meanwhile, heat olive oil in skillet; add onions and sauté until tender. Blend in remaining ingredients. Measure one cup of reserved liquid; add to onion mixture and cook until thickened, stirring constantly. Pour over
squash and beans. Heat and serve in bowls.

Serves 6-8.
