VEGAN TOFU CHEESECAKE
CRUST:
5 cups ground granola
¼ cup Bragg Olive Oil
FILLING:
1 cup soy milk
1 Tbsp vanilla extract
2 tsps arrowroot powder
20 oz firm tofu
½ cup Bragg Olive Oil
1 tsp almond extract
2 tsps Kal Stevia powder
TOPPING:
¾ cup apple juice concentrate
6 cups fresh strawberries
3 Tbsps arrowroot powder
For crust, blend granola and olive oil. Spread in an oiled pie plate and bake at 350°F for 5 minutes. Blend filling ingredients in blender until smooth. Pour into pie crust. Bake at 350°F for 20 minutes. To make topping, mix 2 cup juice concentrate with arrowroot. Simmer strawberries with 4 cup of juice concentrate. Add arrowroot mixture and simmer for 15 minutes. Top cheesecake and chill overnight.

GARLIC TOFU SOUP
20 cloves garlic, peel
4 to 6 cups boiling distilled water
1 tsp Bragg Olive Oil
¼ cup parsley, chop
½ cup pea pods|
16 oz package tofu, cube
Spray of Bragg Liquid Aminos and shake Bragg Sprinkle, to taste
Sauté whole garlic cloves in a skillet with olive oil. Add tofu
cubes, water, parsley, and pea pods. Simmer for 10 minutes.
Spray with Liquid Aminos and add Sprinkle to taste.
Serves 4–6

TOFU AND BEET SALAD
1 cup firm tofu, crumble
¼ cup chives, mince
shake of Bragg Sprinkle
1 cup cooked beets, dice
½ cup tofunaise (see recipe below)
Lettuce or cabbage leaves
Mix tofu, beets, Sprinkle and chives with tofunaise dressing and arrange on lettuce or cabbage leaves.
Serves 2–4.
TOFUNAISE
¼ cup distilled water
1 Tbsp sesame oil
4 oz firm tofu, cut into pieces
1 tsp Bragg Aminos, to taste
shake of Bragg Sprinkle juice from lemon
1 tsp turmeric (optional for color)
Blend all ingredients in blender until smooth. Yields 2 cups.

2 cups raw mushrooms, slice
½ cup firm tofu, crumble
Bragg Vinaigrette or Ginger & Sesame Dressing
Combine and toss salad with dressing to taste.

2 tsps Bragg Organic Olive Oil
2 green onions (including tops), chop
1 cup firm tofu, crumble
½ tsp Bragg Liquid Aminos
¼ tsp turmeric
½ tsp Bragg Sprinkle
pinch cayenne pepper
¼ tsp garlic powder
Sauté onions in olive oil 3 minutes. Add all ingredients, cook 5 minutes longer. Sprinkle with nutritional yeast flakes.

6 oz firm tofu, thin slices
½ cup red onion, thin slices
1 tsp Bragg Organic Olive Oil
shake of Bragg Sprinkle
1 medium tomato, thin slices
½ cup fresh basil
1 tsp Bragg Apple Cider Vinegar
shake of Bragg Kelp
Avocado slices (optional)
Arrange tofu, tomato, onion and basil on serving platter. Add avocado slices if desired. Combine remaining ingredients and drizzle evenly over salad.

4 cups kale
1 tsp lemon juice
¼ tsp sweet anise
1 Tbsp Bragg Organic Olive Oil
1 tsp raw honey
1 cup soft tofu, crumble
Place kale in saucepan. Add next four ingredients. Heat thoroughly, then reduce heat and stir in soft tofu.

1 lb firm tofu, drain and cube
1 Tbsp Bragg Liquid Aminos
1 clove garlic, mince
2 Tbsps Bragg Organic Olive Oil
1 tsp fresh ginger, mince
1 lb spinach, chop
Peanut Sauce (recipe below)
Mix tofu with Liquid Aminos, garlic and ginger. Stir-fry in olive oil until brown. Remove from pan and keep warm. Add spinach to pan and heat just until limp. Arrange on a platter and top with tofu.Serve with Peanut Sauce.
Serves 4–6.
PEANUT SAUCE
1 Tbsp Bragg Organic Olive Oil
½ cup onion, dice
1 Tbsp fresh ginger, mince
¼ tsp cayenne (optional)
¼ — ½ cup hot distilled water
½ cup natural peanut butter
1 tsp Bragg Liquid Aminos
juice of 1 lemon
1 Tbsp molasses
honey to taste
Sauté onion in olive oil 5 minutes. Add remaining ingredients and stir until blended. Add hot water to thin sauce. Makes 2 cups.

2 stalks celery, dice
1 red onion, dice
1 Tbsp tofunaise (see recipe below)
2 tsps Bragg Liquid Aminos
2 Tbsps Bragg Apple Cider Vinegar
1 tsps raw honey (optional)
2 green peppers, dice
Combine ingredients. Refrigerate until ready to serve.
Serves 8.
