VEGAN TOFU CHEESECAKE

VEGAN TOFU CHEESECAKE

CRUST:
5 cups ground gra­nola
¼ cup Bragg Olive Oil

FILLING:
1 cup soy milk
1 Tbsp vanilla extract
2 tsps arrow­root pow­der
20 oz firm tofu
½ cup Bragg Olive Oil
1 tsp almond extract
2 tsps Kal Ste­via powder

TOPPING:
¾ cup apple juice con­cen­trate
6 cups fresh straw­ber­ries
3 Tbsps arrow­root powder

For crust, blend gra­nola and olive oil. Spread in an oiled pie plate and bake at 350°F for 5 min­utes. Blend fill­ing ingre­di­ents in blender until smooth. Pour into pie crust. Bake at 350°F for 20 min­utes. To make top­ping, mix 2 cup juice con­cen­trate with arrow­root. Sim­mer straw­ber­ries with 4 cup of juice con­cen­trate. Add arrow­root mix­ture and sim­mer for 15 min­utes. Top cheese­cake and chill overnight.

GARLIC TOFU SOUP

GARLIC TOFU SOUP

20 cloves gar­lic, peel
4 to 6 cups boil­ing dis­tilled water
1 tsp Bragg Olive Oil
¼ cup pars­ley, chop
½ cup pea pods|
16 oz pack­age tofu, cube
Spray of Bragg Liq­uid Aminos and shake Bragg Sprin­kle, to taste
Sauté whole gar­lic cloves in a skil­let with olive oil. Add tofu
cubes, water, pars­ley, and pea pods. Sim­mer for 10 min­utes.
Spray with Liq­uid Aminos and add Sprin­kle to taste.

Serves 4–6

TOFU and BEET SALAD

TOFU AND BEET SALAD
1 cup firm tofu, crum­ble
¼ cup chives, mince
shake of Bragg Sprin­kle
1 cup cooked beets, dice
½ cup tofu­naise (see recipe below)
Let­tuce or cab­bage leaves

Mix tofu, beets, Sprin­kle and chives with tofu­naise dress­ing and arrange on let­tuce or cab­bage leaves.

Serves 2–4.

TOFUNAISE
¼ cup dis­tilled water
1 Tbsp sesame oil
4 oz firm tofu, cut into pieces
1 tsp Bragg Aminos, to taste
shake of Bragg Sprin­kle juice from lemon
1 tsp turmeric (optional for color)

Blend all ingre­di­ents in blender until smooth. Yields 2 cups.

2 cups raw mush­rooms, slice
½ cup firm tofu, crum­ble
Bragg Vinai­grette or Gin­ger & Sesame Dressing

Com­bine and toss salad with dress­ing to taste.

TOFU SCRAMBLE

2 tsps Bragg Organic Olive Oil
2 green onions (includ­ing tops), chop
1 cup firm tofu, crum­ble
½ tsp Bragg Liq­uid Aminos
¼ tsp turmeric
½ tsp Bragg Sprin­kle
pinch cayenne pep­per
¼ tsp gar­lic powder

Sauté onions in olive oil 3 min­utes. Add all ingre­di­ents, cook 5 min­utes longer. Sprin­kle with nutri­tional yeast flakes.

TOMATO, TOFU and ONION SALAD

6 oz firm tofu, thin slices
½ cup red onion, thin slices
1 tsp Bragg Organic Olive Oil
shake of Bragg Sprin­kle
1 medium tomato, thin slices
½ cup fresh basil
1 tsp Bragg Apple Cider Vine­gar
shake of Bragg Kelp
Avo­cado slices (optional)

Arrange tofu, tomato, onion and basil on serv­ing plat­ter. Add avo­cado slices if desired. Com­bine remain­ing ingre­di­ents and driz­zle evenly over salad.

KALE and SOFT TOFU

4 cups kale
1 tsp lemon juice
¼ tsp sweet anise
1 Tbsp Bragg Organic Olive Oil
1 tsp raw honey
1 cup soft tofu, crumble

Place kale in saucepan. Add next four ingre­di­ents. Heat thor­oughly, then reduce heat and stir in soft tofu.

TOFU and SPINACH WITH PEANUT SAUCE

1 lb firm tofu, drain and cube
1 Tbsp Bragg Liq­uid Aminos
1 clove gar­lic, mince
2 Tbsps Bragg Organic Olive Oil
1 tsp fresh gin­ger, mince
1 lb spinach, chop
Peanut Sauce (recipe below)

Mix tofu with Liq­uid Aminos, gar­lic and gin­ger. Stir-fry in olive oil until brown. Remove from pan and keep warm. Add spinach to pan and heat just until limp. Arrange on a plat­ter and top with tofu.Serve with Peanut Sauce.

Serves 4–6.

PEANUT SAUCE
1 Tbsp Bragg Organic Olive Oil
½ cup onion, dice
1 Tbsp fresh gin­ger, mince
¼ tsp cayenne (optional)
¼ — ½ cup hot dis­tilled water
½ cup nat­ural peanut but­ter
1 tsp Bragg Liq­uid Aminos
juice of 1 lemon
1 Tbsp molasses
honey to taste

Sauté onion in olive oil 5 min­utes. Add remain­ing ingre­di­ents and stir until blended. Add hot water to thin sauce. Makes 2 cups.

2 cups firm tofu, crum­ble
2 stalks cel­ery, dice
1 red onion, dice
1 Tbsp tofu­naise (see recipe below)
2 tsps Bragg Liq­uid Aminos
2 Tbsps Bragg Apple Cider Vine­gar
1 tsps raw honey (optional)
2 green pep­pers, dice

Com­bine ingre­di­ents. Refrig­er­ate until ready to serve.

Serves 8.
