PERSIAN BONBONS

1 lb dates
1 lb nut meats
1 lb raisins
1 cup shred­ded, dried, unsweet­ened coconut

Use fresh, moist fruit. Run all ingre­di­ents through a grinder and knead as for a dough. Pat out on a coconut cov­ered board, cut with small cookie cut­ter, and roll in coconut. Wrap in waxed paper when dry.

AMBROSIA

7 bananas, slice
3 oranges, slice
raw honey (to taste)
1 sliced fresh pineap­ple
1 cup coconut, grate
soy yogurt (optional)
1 cup raw pecans or nuts of choice, chop

Mix fruits, pecans and coconut. Add raw honey to taste. Serve in chilled bowl.

Top with soy yogurt, if desired.

DATE BRAN MUFFINS

1 cup 100% oat bran
Egg Replacer equal to 1 egg
6 dates, halve
¼ cup Bragg Organic Olive Oil
¾ cup whole-grain pas­try flour
1 cup soy or rice milk
¼ cup molasses
2 tsps bak­ing pow­der
½ cup dates, chop

Mix bran and soy milk; let stand five min­utes. Beat Egg Replacer; add molasses to bran mix­ture. Sift dry ingre­di­ents and add to mix­ture. Quickly stir in olive oil. Add chopped dates. Fill oiled muf­fin pans q full. Place half a date on each muf­fin. Bake at 375°F for 30 minutes.
