WHEAT FREE PANCAKES

1 cup potato flour
1½ cups soy milk
Egg Replacer equal to 2 eggs
4½ tsps Bragg Olive Oil
1 cup rice flour
2¼ tsps bak­ing pow­der
4½ Tbsps raw honey
pure maple syrup

Com­bine and sift dry ingre­di­ents three times. Set aside. In another bowl beat Egg Replacer until light, adding olive oil
slowly. Add soy milk and honey and beat again. Add dry ingre­di­ents. Mix. Bake on a hot griddle.

Makes 8–10 pancakes.
