Diabetes Epidemic Will Hit Half of U.S. by 2020
More than half of all Americans may develop diabetes or prediabetes by 2020, unless prevention strategies aimed at weight loss and increased physical activity are widely implemented, according to a new analysis.

BROILED BUTTON MUSHROOMS
8 large button mushrooms, fresh
dash of Bragg Liquid Aminos
2 Tbsps Bragg Organic Olive Oil
whole grain toast or lettuce
Wash mushrooms and remove stem (save stems for soups). Place mushrooms, cap side down in an oiled pan. Broil for three minutes, about 3 inches below flame. Turn over mushrooms and broil on the other side three more minutes. Put olive oil and Liquid Aminos in each cap; broil until warm in center. Serve on whole-grain toast or a bed of shredded lettuce. Serves 2-4.

COUSCOUS PACKETS
½ cup distilled water
pinch curry powder
⅓ cup couscous
1 tsp Bragg Olive Oil
2 Tbsps raisins or currants
2 Tbsps toasted pine nuts
6 lettuce or large spinach leaves, wash and dry
In a small bowl, soften currants in warm distilled water. Stir in couscous, olive oil, and curry powder. Let sit for 10 minutes. Stir in pine nuts. Fill each spinach leaf with about 1 Tbsp of couscous and fold over sides to form a packet. Secure packets with toothpicks, if desired.

Grind 1 cup pitted dates and 4 tablespoons nuts of choice. Blend using food processor. Add enough fresh orange juice to make the mixture spreadable. A squeeze of fresh lemon juice reduces sweet taste if desired.

1 eggplant
4 cloves garlic, slice

shake of Bragg Sprinkle
Bragg Liquid Aminos
1 cup distilled water
Cut eggplant in half, stud with sliced garlic. Spray with Liquid Aminos and add Sprinkle. Place in casserole with water. Cover tightly, bake at 350°F for 40 minutes or until soft. Variation: last minutes add diced tomatoes and grated soy cheese.
