TOFU AND VEGGIE SALAD

2 cups celery, dice
1 cup carrots, grate
2 green onions, chop
1 garlic clove, mince
¼ cup parsley, chop
½ tsp Bragg Liquid Aminos
½ cup bell peppers, dice
pinch of mustard powder
1 cup firm tofu, crumble
shake of Bragg Sprinkle
2 Tbsps Bragg Apple Cider Vinegar
3 Tbsps Bragg Olive Oil

Lettuce, cabbage or watercress shake of Bragg Sea Kelp Mix all ingredients and chill. Serve on bed of lettuce, sliced cabbage or watercress.

Serves 2-4.

Olive Oil Protects Liver

Extra-virgin olive oil can protect the liver from oxidative stress. Researchers writing in BioMed Central’s open access journal Nutrition and Metabolism exposed rats to a moderately toxic herbicide known to deplete antioxidants and cause oxidative stress, finding that those rats fed on a diet containing the olive oil were partially protected from the resulting liver damage.

TAMALE PIE

TAMALE PIE

1¼ cups organic cornmeal
6 cups distilled water
1 large red onion
1 large green or chili pepper
1 tsp Bragg Liquid Aminos
4 garlic cloves, mash
3 cups fresh tomatoes, chop
3¾ Tbsps Bragg Organic Olive Oil
10 black olives, slice
2½ cups firm tofu, crumble
chili powder to season
½ tsp of Bragg Sprinkle

Add organic cornmeal and Liquid Aminos to water in top of double boiler and cook for 45 minutes. Chop onion and pepper and sauté in hot olive oil. Add tomatoes, tofu and chili powder; cook until thickened. Line an oiled baking dish with half of the cornmeal mixture, pour in tofu and vegetable mixture, then cover with remaining cornmeal. Bake at 375°F for 30 minutes or until top is lightly browned.

Serves 6.

PURÉE OF SPINACH SOUP

3/4  cup steamed spinach
2 cups distilled water
3 Tbsps potato flour
2 Tbsps Bragg Olive Oil
3 Tbsps soft tofu (optional)
½ cup soy milk
½ tsp Bragg Liquid Aminos
shake of Bragg Sprinkle

Sauté spinach in olive oil 4 minutes. In a blender add flour and tofu to soy milk and water; add seasonings if desired. Mix all ingredients until smooth. Heat again. Garnish with soy yogurt or soy sour cream if desired.

Serves 4.

Variation: any vegetable of your choice, carrots, squash, etc. make a delicious creamed soup.
