Remembering Christchurch while sending prayers to all earthquake victims and survivors

I had the pleasure of visiting beautiful Christchurch 2 years ago with two American friends. When you visit Christchurch you will be met with some of the friendliest people.

Their strong family values, well behaved children, healthy lifestyles, respect for nature  is a big part of the New Zealand way of living.

Seeing the nearby glaciers was the highlight of our trip and canoeing on the spectacular Avon River made me feel like being in a magical place.

Since New Zealand was part of Great Britain for years, the city has a unique feeling Europe.

20 years ago, I had a wonderful experience lecturing at Christchurch Townhall for the many Bragg followers who live there.  I pray that all the earthquake victims and survivors in Christchurch will stay strong and rebuild their beautiful city soon.

SWEET AND SOUR TOFU

SWEET AND SOUR TOFU

1 lb firm tofu, drained and cubed
2 onions, slice
2 Tbsps Bragg Organic Olive Oil
1 Tbsp arrowroot
1 carrot, diagonally slice
1 red pepper, slice
1 Tbsp Bragg Liquid Aminos
¼ cup distilled water
2 zucchini, slice thin
1 cup pineapple juice
1½ cups pineapple chunks
1 tsp ginger, mince
¼ cup Bragg Apple Cider Vinegar
1 Tbsp raw honey

Brown tofu in olive oil. Add pineapple and vegetables and cook for 10 minutes. Make a paste with arrowroot, Liquid Aminos and distilled water. Add paste to vegetables, then add remaining ingredients and simmer until thickened. Serve with brown rice.

Serves 4.

OKRA SPECIALTY

OKRA SPECIALTY

2 cups okra, thinly slice
1 large red onion, slice
2 large tomatoes, chop
1 tsp Bragg Liquid Aminos
2 cloves garlic, mince
shake of Bragg Sprinkle

Cut and mix ingredients. Add enough distilled water to steam until tender. Serve in shallow bowls with liquid.

Serves 4.

CRISP AND COOL GREEN DRINK

CRISP AND COOL GREEN DRINK

10 green Romaine lettuce leaves
2 cucumbers, peel, slice
½ medium honeydew melon, cubed
2 celery stalks, chop
2 cups distilled water
2-3 apples, core, chop

Select the darkest green Romaine lettuce leaves possible and blend all ingredients together.

Makes about 1 quart.
