DATE AND BROWN RICE PUDDING

¾ cup dates or raisins, chop
Egg Replacer equal to 4 eggs
3 cups warm soy or rice milk
3½ Tbsps raw honey
1 cup cooked brown rice

Mix all ingredients well and pour into custard cups. Place cups in pan of hot water and bake at 350°F for 30-45 minutes.

POTATOES NICOISE

1 lb small new potatoes, with skins, quartered
1 lb green beans
1 cup cherry tomatoes
¼ cup parsley, chopped
2 Tbsps capers
1 cup black olives, sliced

DRESSING:
4 Tbsps Bragg Organic Olive
2 Tbsps Bragg Apple Cider Vinegar
2 Tbsps balsamic vinegar
1 tsp Dijon mustard
1 tsp Bragg Liquid Aminos
2 garlic cloves, minced

Steam potatoes and green beans until tender. To make dressing, mix olive oil, vinegars, mustard, Liquid Aminos, and garlic in bowl. Arrange lettuce leaves on platter. Top with cooked potatoes and half of dressing. Top with cooked green beans and remaining dressing. Arrange cherry tomatoes around outside of potatoes. Garnish platter with olives, capers and parsley. Serves 4.

EGGPLANT DIP

1 large globe eggplant
2 Tbsps lemon juice
⅓ cup silken soft tofu
1 tsp garlic, mince
⅓ cup dry whole-grain
¼ tsp red pepper sauce
bread crumbs
3 Tbsps parsley, mince
½ tsp Bragg Sprinkle (24 herbs & spices)

Pierce eggplant in several places with a fork and place it on a baking sheet. Broil about 6-inches from the heat until blackened on all sides. Remove from oven and set aside to cool. When the eggplant is cool enough to handle, cut it open and spoon the flesh into a large bowl. Mash it with a fork, breaking up any long strands. Stir in bread crumbs, silken tofu, lemon juice, garlic, Sprinkle and red pepper sauce. Spread on decorative plate. Sprinkle with parsley. Chill completely. Serve with thin rounds of crisp raw vegetables, such as zucchini, jicama, celery, carrots, turnips, sweet potatoes. Delicious on heated pita bread. Makes 1 cup.

Researchers in France assessed data on about 3,500 British men and 1,300 British women with an average age of 55 who participated in Whitehall II, a long-term study that tracked British civil servants.

PROTEIN, PINEAPPLE, ALMOND MILK

1 cup raw almonds
2 bananas
1 Tbsp soy protein powder
2-4 cups fresh pineapple juice
Variation: Cashew or almond milk

Blend almonds and soy protein powder with small amount of pineapple juice and then add more pineapple juice to desired thickness. Follow same procedure for cashew or almond milk if desired. Serves 4.
