PHILIPPINE FRUIT COMPOTE & DRESSING

PHILIPPINE FRUIT COMPOTE & DRESSING

1 cup plums, dice

1 cup apricots, dice

3 Tbsps lime juice

⅛ tsp cinnamon

1 cup pears, dice

3 Tbsps raw honey

3 Tbsps pine nuts

¼ tsp ginger

Mix honey, lime juice, cinnamon, ginger and pine nuts. Thin with a little water until runny. Use as a dressing for the fruit compote, mixing thoroughly. Chill before serving. Serves 4.

JAPANESE SALAD

JAPANESE SALAD

1 cup spinach leaves, tear

⅓ tsp fresh ginger, mince

2 Tbsps lemon juice

1 tsp Bragg Liquid Aminos

sesame seeds, to taste

1 tomato

1 tsp sesame seed

1 Tbsp raw honey

Chop tomato and tear spinach leaves; prepare dressing of lemon juice, Liquid Aminos, honey, ginger root and toss with salad. Sprinkle with sesame seeds. Serves 4.
