“I found out very quickly, even though these high protein, low carbohydrate diets work, people don’t adhere to them for very long, and because of that… the benefits will go away once you stop following the diet. I ran across this very obscure article, published in the 1980’s, and it was in mice! They fed these mice high-carbohydrate foods and added vinegar to their diets, and saw this effect on blood-glucose.

I thought at the time, my goodness!

This sounded so much simpler than changing your entire diet. You would eat your same diet, you would just incorporate vinegar into the meal.

So my first study was very simple: I took some diabetics, and they consumed a high-carbohydrate meal that made their blood sugar rise, and then they consumed the same meal with Vinegar, and we saw a significant reduction in the [blood] glucose.”
