PAPAYA HAWAIIAN SALAD

2 cups papaya, dice
¾ cup celery, dice
1½ cups fresh pineapple, dice
6 dates, pit, chop
4-6 lettuce leaves
1½ Tbsps finely chopped
mixed raw nuts or seeds of choice (almonds, sunflower, peanuts, pine nuts, walnuts, etc.)
2 Tbsps soy yogurt (optional)

Prepare fruit. Combine celery and yogurt. Add raw nuts, seeds and chopped dates. Serve on crisp lettuce leaves. Serves 4-6.
