Dr. Deepak Chopra recently came to Santa Barbara to speak on his mission to raise the consciousness of 100 million people, and Dr. Patricia Bragg attended the event.  Here is a photo of the two Health Super-Stars together!

Deepak Chopra’s Ratatouille Stew

Serves 4
  • 1 large eggplant, peeled and diced
  • 1 teaspoon olive oil
  • 2 large leeks or onions, chopped
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Bragg Liquid Aminos or tamari
  • 2 large zucchini, cubed
  • 3 large green and red bell peppers, cubed
  • 2 cups diced tomatoes
  • 1 1/2 cups vegetable stock
  • 1/2 cup thinly sliced fresh basil

Submerge the eggplant cubes in a bowl of water with a sprinkle of salt in it. Set aside. Heat the olive oil in a large soup pot over medium heat. Add the leeks, Italian seasoning, marjoram, thyme, black pepper, garlic powder, and liquid aminos and sauté briefly. Add the eggplant, zucchini, and bell peppers and sauté for 4 to 5 minutes. Add the tomatoes and continue to simmer another 3 to 4 minutes. Add the vegetable stock when the mixture begins to dry out. Simmer the stew over low heat for 20 to 30 minutes. Add the fresh basil just before serving. Reprinted from the book What Are You Hungry For?
