POTATOES STUFFED WITH SOY CHEESE

3 large potatoes

Seasonings of your choice

¼ lb soy cheese, grate

Scrub and dry potatoes. Use apple corer to remove center of each potato. Fill each center cavity with soy cheese and seasonings of choice. Plug ends with pieces of remaining potato. Bake at 400°F until tender, 30-45 minutes. Serves 3.
