HOME MADE PITA BREAD WITH AVOCADO, GREEN PEPPERS, ONION….

1 pkg active dry yeast
1 tsp raw honey
4 cups organic whole-wheat flour
2 cups warm distilled water
1 tsp Bragg Sprinkle

In a large bowl mix yeast, honey and flour together; then add water and Sprinkle and mix well. Cover and set aside in a warm place. Let rise until doubled. Punch down, divide into 12 balls. Put 2 cups flour on counter, roll balls out into circles about 8 inches thick. Place on un-greased cookie sheets to rise. Turn bread over gently with both hands while rising. Bake at 450°F for 5 minutes.

Makes 12 pitas.

When done add: Avocado, green pepper, onion, cucumber, sprouts & shred raw carrot & beet.

PURÉE OF BEETS WITH SOY YOGURT

2 lbs beets
1 Tbsp Bragg Organic Olive Oil
4 Tbsps soft tofu or soy yogurt
1 tsp Bragg Liquid Aminos

Cook or steam beets with skins until tender in distilled water. Purée cooked beets with liquid, add olive oil and Liquid Aminos. This is delicious hot or cold and even as a soup. Top with soy vanilla yogurt or tofu sour cream.

Serves 6.

TOFU AND BEET SALAD

TOFU AND BEET SALAD
1 cup firm tofu, crumble
¼ cup chives, mince
shake of Bragg Sprinkle
1 cup cooked beets, dice
½ cup tofunaise (see recipe below)
Lettuce or cabbage leaves

Mix tofu, beets, Sprinkle and chives with tofunaise dressing and arrange on lettuce or cabbage leaves.

Serves 2-4.

TOFUNAISE
¼ cup distilled water
1 Tbsp sesame oil
4 oz firm tofu, cut into pieces
1 tsp Bragg Aminos, to taste
shake of Bragg Sprinkle juice from lemon
1 tsp turmeric (optional for color)

Blend all ingredients in blender until smooth. Yields 2 cups.

BEETS EN ORANGE

¾ cup freshly squeezed orange juice
1¼ tsps grated orange rind
2 Tbsps Bragg Organic Olive Oil
2 Tbsps potato flour or arrowroot flour
3¼ cups cooked beets, slice
¾ cup distilled water
2 tsps raw honey

Stir potato or arrowroot flour into olive oil; add water slowly. Add orange rind, orange juice and honey. Cook until smooth and thick. While stirring, add cooked sliced beets and cook 3-5 minutes.

Serves 4-6.

BEET AND PASTA SALAD with TOFUNAISE

8 oz whole-grain pasta shells, cook
⅔ cup pine, hazel or walnuts, chop
3 Tbsps Bragg Organic Apple Cider Vinegar
Bragg Liquid Aminos (to taste)

DRESSING:
2 tsps soy milk
2 tsps horseradish
4 Tbsps tofunaise (see recipe below)
2 uncooked beets
3 scallions, slice
2 celery stalks, chop
⅓ cup raisins or currants
1 apple, core and slice

GARNISH:
curly leaf lettuce
watercress
2 ripe avocados, slice

Halve beets, cook in steamer basket 15 minutes. Drain, cool, and chop. Cook pasta; drain and toss with vinegar and Liquid Aminos. Cool mixture. Mix pasta with beets, celery, onions, nuts and apples. Add raisins (optional). Stir all ingredients and dressing together and mix into salad bowl. Chill. To serve, place salad in the center of the lettuce and
top with avocado slices and watercress. Serves 4-6.

TOFUNAISE
¼ cup distilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprinkle
1 tsp turmeric (optional for color)
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon

Blend all ingredients in blender until smooth.  Yields 2 cups
