BROWN RICE AND NUT PILAF

1¼ cups brown rice
2 cloves garlic, crush
2 Tbsps Bragg Olive Oil
1 tsp Bragg Sprinkle
½ cup unsalted raw nuts
fresh parsley, chop
1 onion, dice
1 large carrot, grate
2 cups veggie stock or distilled water
1 tsp mustard seeds (optional)
Bragg Liquid Aminos to taste

In a large shallow pan, gently sauté onion, garlic and carrot in olive oil for 3-5 minutes. Stir in rice and spices. Cook for a minute or two until grains are coated in oil. Pour in stock or water, add Liquid Aminos and Sprinkle. Bring to boil, cover, simmer gently 40 minutes. Remove from heat without lifting lid – this helps rice to firm up and cool properly. Set for 5 minutes. If rice is done there will be small steam holes in center. Stir in nuts. Season to taste. Sprinkle parsley and yeast flakes on top. Recipe can be made ahead and reheated.

Serves 4.

BROWN RICE VS. WHITE RICE: WHICH IS BETTER?

Replacing white rice in your diet with brown rice may reduce the risk of developing type 2 diabetes, according to a new study.

The finding is important because the consumption of white rice in the United States has increased dramatically in the past few decades, and about 18 million Americans have type 2 diabetes.

MUSHROOM – BROWN RICE

2 cups brown rice, cook
2 red onions, chop
½ tsp Bragg Sprinkle
1 Tbsp Bragg Liquid Aminos
1 tsp nutritional yeast flakes
1½ cups mushrooms, fresh
4 oz soy cheddar cheese, grate
Egg Replacer equal to 2 eggs
Bragg Organic Olive Oil

Wash and cook rice in boiling water until tender. Wash and roughly chop mushrooms. Sauté mushrooms and red onions in olive oil and Liquid Aminos for 10 minutes, then mix in Egg Replacer with the grated soy cheese, Sprinkle, nutritional yeast, onions, mushrooms and rice. Place in an oiled baking dish.  Bake in 400°F oven for 15 minutes.

Serves 4.

BROWN RICE BURGERS

1 red onion, mince
Bragg Olive Oil
¼ cup soy milk
shake of Bragg Sprinkle
4 Tbsps whole-grain flour
1 tsp Bragg Liquid Aminos
1 cup whole-grain cracker crumbs
2 cups cooked wild and/or brown rice

Add 2 cup of the whole-grain cracker crumbs, Liquid Aminos, soy milk, whole-grain flour, onion and Sprinkle to the cold cooked rice. Mix lightly. Shape into round balls and roll in remaining cracker crumbs. Brush lightly with olive oil. Place in oiled baking pan and bake at 350°F until golden brown. This may also be prepared with cooked whole-grain cereal, kasha or bulgur instead of brown or wild rice.

Serves 4-6.
