¾ lb dates
⅓ cup honey
½ tsp vanilla extract
4 squares carob
1½ Tbsps boiling distilled water

Wipe the dates and remove the pits through a small lengthwise slit. Grate the carob into a small saucepan; add honey, boiling water and vanilla. Heat without boiling until smooth, keeping mixture fluid by setting saucepan in a pan of boiling water. Fill dates with the carob mixture, gently pressing the edges together. Let stand to harden.
