CAROB – NUT FROZEN BANANAS

carob powder
bananas, firm, ripe
raw peanut or raw cashew or almond  butter
chopped raw nuts (of choice)

Peel firm bananas. Place on cookie sheet and freeze. Mix carob powder with peanut or cashew butter to taste. Remove frozen bananas and cover with nut butter mixture. Roll covered bananas in chopped nuts of choice and refreeze until ready to serve.

FAVORITE CAROB CUSTARD

4 cups soy milk
Egg Replacer equal to 6 eggs
1 cup carob powder
2 Tbsps raw honey
1 tsp vanilla extract

Scald milk. Add small amount of soy milk to carob and blend to smooth paste; add hot soy milk. Add honey and vanilla extract to slightly beaten Egg Replacer. Stir soy milk and carob mixture into Egg Replacer and bake at 350°F for about 30 minutes.

Serves 6-8.

CALIFORNIA CAROB DATES

¾ lb dates
⅓ cup honey
½ tsp vanilla extract
4 squares carob
1½ Tbsps boiling distilled water

Wipe the dates and remove the pits through a small lengthwise slit. Grate the carob into a small saucepan; add honey, boiling water and vanilla. Heat without boiling until smooth, keeping mixture fluid by setting saucepan in a pan of boiling water. Fill dates with the carob mixture, gently pressing the edges together. Let stand to harden.

CAROB – BAR COOKIES

3 carob squares
3 cups rolled oats
2 tsps pure vanilla
½ cup Bragg Organic Olive Oil
½ cup raw honey or rice syrup
⅓ cup chopped nut meats

Melt carob and olive oil in top of double boiler. Add remaining ingredients and blend well. Pack firmly into an oiled square pan. Bake at 425°F for 12 minutes. Chill. Cut into bars.

Makes 2-3 dozen cookies, depending on bar size.

HONEY
Honey has been the natural sweetener for thousands of years. We recommend using natural organic raw honey in your recipes as an alternative to refined white sugar. It can be used successfully in many recipes including cooking and baking. Because honey is a concentrated source of carbohydrate, best to use in moderation.
