LEMON TEA DROPS

Use 3 unchilled basic dough (below recipe) to make 36 small tea muffins. Fill oiled 2-inch muffin pan halfway full. Mix 1 cup honey, 2 tsps lemon juice and 2 Tbsps grated lemon rind. Sprinkle about 1 tablespoon over each muffin. Cover with damp cloth and let rise at 8085°F about 45 minutes. Bake at 375°F for 20 minutes

BASIC DOUGH: THREE-IN-ONE BREAD RECIPE
3 cups lukewarm soy milk
1½ cups lukewarm distilled water
¾ cup Bragg Organic Olive Oil
13½ cups whole-grain pastry flour
6 pkgs quick-rise yeast
⅜ cup raw honey
Egg Replacer equal to 3 eggs

Soften yeast in lukewarm water and soy milk. Blend in honey, olive oil and Egg Replacer. Gradually add sifted flour. Mix until dough is well-blended and soft. Split into thirds. Dough can be used for lemon tea drops (recipe below). Chill remaining dough for cinnamon loaf and dinner rolls (recipes below).

BANANA RAISIN MUFFINS

BANANA RAISIN MUFFINS

1½ cups whole-grain flour
1 tsp baking soda
½ cup organic raw honey
¼ cup Bragg Olive Oil
¼ cup soy milk
1 cup bananas, mash
1 tsp vanilla extract
⅓ cup organic raisins
¼-½ cup chop nuts (optional)

Stir baking soda and flour into a bowl. Add honey, olive oil, soy milk, mashed bananas and vanilla extract. Mix until flour is just moistened. Fold in raisins and nuts if desired. Fill oiled muffin tins w full with batter. Bake 375°F for 15 minutes or until golden brown. Remove from pan immediately.

Makes 12.

DATE BRAN MUFFINS

1 cup 100% oat bran
Egg Replacer equal to 1 egg
6 dates, halve
¼ cup Bragg Organic Olive Oil
¾ cup whole-grain pastry flour
1 cup soy or rice milk
¼ cup molasses
2 tsps baking powder
½ cup dates, chop

Mix bran and soy milk; let stand five minutes. Beat Egg Replacer; add molasses to bran mixture. Sift dry ingredients and add to mixture. Quickly stir in olive oil. Add chopped dates. Fill oiled muffin pans q full. Place half a date on each muffin. Bake at 375°F for 30 minutes.
