MUSHROOM BURGERS

1 small onion, finely chop
Egg Replacer equal to 1 egg
Bragg Organic Olive Oil
2 cups mushrooms, finely chop
1 tsp Bragg Liquid Aminos
1 cup whole-grain bread crumbs

Mix all ingredients well and form into small burgers. Sauté in olive oil, turning until brown on both sides.

Serves 6-8.

BROILED BUTTON MUSHROOMS

BROILED BUTTON MUSHROOMS

8 large button mushrooms, fresh
2 Tbsps Bragg Organic Olive Oil
dash of Bragg Liquid Aminos
whole grain toast or lettuce

Wash mushrooms and remove stem (save stems for soups). Place mushrooms, cap side down in an oiled pan. Broil for three minutes, about 3 inches below flame. Turn over mushrooms and broil on the other side three more minutes. Put olive oil and Liquid Aminos in each cap; broil until warm in center.  Serve on whole-grain toast or a bed of shredded lettuce.

Serves 2-4.

The popular button mushroom is the most widely used and is readily available, fresh or canned. Asian mushrooms
are also high in protein, and have greater health benefits. Shiitake, reishi, oyster, portobello, porcini, chanterelle, crimini, etc., are available dried and fresh in many whole-food supermarkets, health stores and Asian markets. Mushrooms are a delicious addition to pastas, vegetables, soups, and casseroles. They can also be used as an entrée. Experiment with different types of mushrooms in the following recipes.

BROCCOLI – MUSHROOM PATTIES

BROCCOLI – MUSHROOM PATTIES

2 cups broccoli, chop
1 cup mushrooms, dice
½ cup celery, finely chop
3 green onions, finely chop
½ cup raw peanut butter
1 tsp Bragg Liquid Aminos
lettuce/parsley (as garnish)
shake of Bragg Sprinkle

Put broccoli through food grinder then add mushrooms, onions and celery. Add remaining ingredients except lettuce and parsley. Form into patties. Serve on bed of lettuce and garnish with parsley or watercress.

Serves 4.

BOSTON MUSHROOM AND ONION PILAF

BOSTON MUSHROOM AND ONION PILAF

1½ cups rice, brown or wild
6 Tbsps Bragg Organic Olive Oil
½ lb fresh mushrooms, slice
2 large red onions, slice rings
1 tsp Bragg Liquid Aminos
1 tsp fresh ginger, grate
shake of Bragg Sprinkle
3 cups boiling distilled water

Wash and drain rice. Heat oil in heavy frying pan. Add rice and cook over low heat until browned. Add mushrooms; brown lightly. Arrange onion rings over top. Pour boiling water and Liquid Aminos, Sprinkle and ginger over rice. Cover frying pan tightly. Reduce heat, steam covered, for one hour or until liquid is completely absorbed. The rice should still be moist.

Serves 6.

8-10 fresh mushrooms, of your choice, slice
2-3 tomatoes, slice
1 head romaine lettuce, tear
½ red onion, chop
½ tsp Bragg Liquid Aminos
shake of Bragg Sprinkle and Bragg Sea Kelp Seasoning

Combine all ingredients in salad bowl.

Serves 4.

STUFFED MUSHROOMS

STUFFED MUSHROOMS

14 large mushrooms
3 Tbsps sunflower seeds, chop
½ cup raw wheat germ
1 Tbsp Bragg Liquid Aminos
2 Tbsps onions, mince
2 Tbsps soy cheddar cheese, grate
3 garlic cloves, mince
⅓ cup Bragg Organic Olive Oil
¼ cup sunflower seeds, chop or whole (for topping)

Remove mushroom stems and finely chop. Add remaining ingredients and mix well. Top mushroom caps with this mixture and sprinkle with chopped or whole sunflower seeds. Lightly broil in pie tin until caps are tender.

Serves 4.

MUSHROOM BALLS

3 cups mushrooms, mince
1 Tbsp garlic, mince
raw sesame seeds
1 cup raw almond butter
1 Tbsp Bragg Liquid Aminos
shake of Bragg Sprinkle

Combine all ingredients except sesame seeds and form into balls. Roll each ball on sesame seeds. Serve on a bed of lettuce with either sliced tomato halves or sliced red radishes.
