MUSHROOM – BROWN RICE

2 cups brown rice, cook
2 red onions, chop
½ tsp Bragg Sprinkle
1 Tbsp Bragg Liquid Aminos
1 tsp nutritional yeast flakes
1½ cups mushrooms, fresh
4 oz soy cheddar cheese, grate
Egg Replacer equal to 2 eggs
Bragg Organic Olive Oil

Wash and cook rice in boiling water until tender. Wash and roughly chop mushrooms. Sauté mushrooms and red onions in olive oil and Liquid Aminos for 10 minutes, then mix in Egg Replacer with the grated soy cheese, Sprinkle, nutritional yeast, onions, mushrooms and rice. Place in an oiled baking dish.  Bake in 400°F oven for 15 minutes.

Serves 4.

The Power of Crimini Mushrooms

Coffee colored and richer in flavor and nutrients than the more common white button mushroom, crimini mushrooms are available throughout the year.

Mushrooms are as mysteriously unique as they are delicious. While often thought of as a vegetable and prepared like one, mushrooms are actually a fungus, a special type of living organism that has no roots, leaves, flowers or seeds. While mushroom can be cultivated, they can also be found growing wild in many regions of the world.

VEGETARIAN MUSHROOM CUTLETS

1 cup fresh mushrooms, slice
½ cup raw beets, finely grate
½ cup sunflower seeds finely ground
2 Tbsps Bragg Liquid Aminos
Egg Replacer equal to 2 eggs
½ cup fresh carrots, grate
⅓ tsp Bragg Sprinkle
½ cup raw wheat germ
⅔ cup red onions, chop

Combine all ingredients and mix well. If mixture is too wet to form into patties, add more wheat germ. Place mixture in
refrigerator for 30 minutes. Shape into patties. Sauté in lightly
oiled skillet browning on both sides.

Serves 4.
