DATE AND NUT CRUMBLE

Egg Replacer equal to 2 eggs
2 Tbsps whole-grain flour
¼ tsp pure vanilla extract
2 cups dates, chop
½ cup raw honey
¼ tsp baking powder
1 Tbsp soy milk
1 cup nuts or seeds, chop

Add honey to Egg Replacer. Add sifted dry ingredients, dates and nuts or seeds, then soy milk and vanilla extract. Spread a thin layer in an oiled 9×9-inch pan. Bake at 250°F for 35 minutes. Cool and break into small pieces. Pile pieces alternately with whipped soy, nut, or rice cream, or soy yogurt in chilled sherbet glasses.
