HUMMUS

HUMMUS*
2 cups cooked garbanzo beans
juice of 1 lemon
1 tsp Bragg Liquid Aminos
1 cup tahini
shakes of Bragg Sprinkle
2 cloves garlic, chop

In blender, place cooked garbanzos with enough liquid to keep wet, about the consistency of peanut butter. Add tahini, garlic, lemon juice, Sprinkle and Liquid Aminos. Blend well and chill for 1 hour before serving. This makes nutritious pita sandwich spreads and tasty dips. This combination is important in a vegetarian diet since it supplies a substantial amount of vegetable protein. Makes 2 cups.

BEAN SPREAD, NUT BUTTER AND VEGETABLE SPREAD

BEAN SPREAD

Combine cooked beans of your choice with chopped onion, minced parsley, tofunaise (page 139). Blend into a spread for dips, sandwiches or stuffings. When making sandwiches, prepare open face with a lettuce leaf or cabbage leaf on top.

NUT BUTTER AND VEGETABLE SPREAD

Combine grated or ground raw carrots, celery, and onions with nut butter of choice. Season to taste.

LENTIL LOAF

LENTIL LOAF

1½ cups cooked lentils
1½ cups soy milk
1½ cups whole-grain bread crumbs
¾ tsp Bragg Liquid Aminos
1½ Tbsps parsley, chop
shake of Bragg Sprinkle

Mix all ingredients well, place in oiled pan. Bake at 350°F for 20 minutes until firm. Beans or peas may be substituted for lentils. Also cooked whole-grain cereal (many varieties to choose from) can be used instead of lentils.

Serves 5.
