SUNFLOWER SEED SOUP

¾ cup carrots, grate
1 large red onion, finely chop
2 Tbsps Bragg Organic Olive Oil
3 medium sized tomatoes
1 tsp raw honey
1½ cups distilled water
1 Tbsp Bragg Liquid Aminos
½ cup sunflower seed meal*
shake of Bragg Sprinkle (24 herbs & spices)

Skin tomatoes, if desired and blend in food processor until smooth. Slowly heat olive oil in saucepan, sauté carrots and onions over low heat, 3 minutes. Add water, cover and cook until vegetables are tender. To tomato mixture add cooked vegetables including water and blend in food processor until smooth. Pour mixture back into saucepan, add Liquid Aminos, Sprinkle, honey and sunflower seed meal. Reheat to below simmer point, stirring constantly. For more nutrition, garnish with soy yogurt, chopped green onions with stems, or avocado slices.

Serves 4.

*Sunflower seed and nut meals can be purchased at health stores, or better to make your own in blender or grain or electric coffee grinder.

CORN CHOWDER

CORN CHOWDER

1 small red onion, slice
1 Tbsp raw honey
3 cups potatoes, dice
1 Tbsp Bragg Organic Olive Oil
1½ cups corn kernels
1 cup fresh or can tomatoes
1 cup soy milk 1 tsp Bragg Liquid Aminos
shake of Bragg Sprinkle (24 herbs & spices)

Add the onion to the olive oil and slowly sauté for five minutes without browning. Add vegetables to 1 qt. boiling distilled water; cook until tender. Slowly add soy milk, Liquid Aminos, Sprinkle and honey. Serve hot.

Serves 4.

ROYAL SOUP

ROYAL SOUP

3¾ cups potatoes, dice
1½ qts boiling distilled water
1½ cups fresh or frozen peas
½ tsp Bragg Liquid Aminos
1½ cups asparagus stalks, chop
4½ Tbsps chives, chop
3 Tbsps Bragg Organic Olive Oil
¼ tsp thyme
shake of Bragg Sprinkle (24 herbs & spices) and Bragg Sea Kelp

Cook potatoes in boiling water for 15 minutes until tender. Drain, reserving liquid; press potatoes through a strainer and add to saved potato liquid. Add peas and chopped asparagus. Simmer 10-15 minutes or until tender. Add chives, olive oil, Liquid Aminos, Bragg Sprinkle and Sea Kelp.

Serves about 6.

GARLIC TOFU SOUP

GARLIC TOFU SOUP

20 cloves garlic, peel
4 to 6 cups boiling distilled water
1 tsp Bragg Olive Oil
¼ cup parsley, chop
½ cup pea pods|
16 oz package tofu, cube
Spray of Bragg Liquid Aminos and shake Bragg Sprinkle, to taste
Sauté whole garlic cloves in a skillet with olive oil. Add tofu
cubes, water, parsley, and pea pods. Simmer for 10 minutes.
Spray with Liquid Aminos and add Sprinkle to taste.

Serves 4-6

TURNIP – CARROT SOUP

6 white turnips, slice
4 carrots, slice
2 cups distilled water
2 Tbsps Bragg Organic Olive Oil
½ cup organic brown rice
4 cups vegetable stock (page 10)
Bragg Sprinkle (24 herbs & spices), to taste

Put sliced turnips, carrots, brown rice, seasonings, stock and water in heavy soup pot with olive oil. Cover, cook for 30 minutes. Garnish with nutritional yeast flakes.

Serves 4.

BLACK OLIVE SOUP

4½ cups soy milk
2¼ Tbsps whole-grain flour
shake of Bragg Sprinkle
1½ cups black olives, pitted
1½ Tbsps onion, grate
3 Tbsps Bragg Organic Olive Oil
½ cup cooked celery, dice
1 tsp Bragg Liquid Aminos

Sauté onion in 1 tablespoon olive oil. Combine soy milk and onion. Blend in blender. Mix flour in 2 tablespoons olive oil, Liquid Aminos and Sprinkle. Mix with celery and olives. Cook for 10 minutes on low heat.

Serves 6.

FRENCH ONION SOUP

4 cups consommé (see recipe below)
4 medium onions, thinly slice
3 Tbsps Bragg Olive Oil
2½ Tbsps dry soy cheese, grate
4 slices of whole grain bread
½ tsp of Bragg Sprinkle

Sauté onions in olive oil and Bragg Sprinkle until golden and tender. Add to consommé stock. Simmer for a few minutes. Toast whole-grain bread until thoroughly dry. Oil bread, then place at the bottom of a soup plate; pour onion soup over it. Sprinkle with grated soy cheese before serving.

Serves 4.

BRAGG LIQUID AMINOS – CONSOMME
A delicious consommé can be made by adding Bragg Liquid Aminos (1-2 tsps per cup) to hot distilled water. Seasonings may be added for extra flavor. Bragg Liquid Aminos give an excellent flavor to broth and soups when used as base stock. It is the healthiest of broths. It contains 16 essential amino acids from soy. Sip this delicious consommé as is, or add it to flavor other soups.

DUTCH VEGETABLE SOUP

1 cup tomatoes, chop
1 cup corn kernels
1 large turnip, dice
¼ cup soy or rice milk
½ tsp whole-grain flour
1 cup cabbage, chop
1 carrot, dice
1 onion, slice
½ tsp Bragg Liquid Aminos
1 cup dried lima beans (soak overnight)

Cook vegetables and lima beans in water until limas are soft. Season to taste with Liquid Aminos. Mix the flour with milk and stir into soup. Serve hot.

Serves 5.
