STIR-FRY ASPARAGUS AND TOFU

16 oz package firm tofu, cube
½ cup cucumbers, thin slice
1 tsp Bragg Liquid Aminos
2 cups asparagus, 1” cuts
½ tsp Bragg Sprinkle
⅓ tsp chili spice, to taste

Cut drained tofu into cubes. Add Liquid Aminos, Sprinkle and tofu to hot skillet. Stir-fry for 5 minutes. Add asparagus and cucumbers. Sprinkle with chili spice as desired. Stir-fry 5 more minutes. Serve hot.

Serves 2-4.

BROILED BUTTON MUSHROOMS

BROILED BUTTON MUSHROOMS

8 large button mushrooms, fresh
2 Tbsps Bragg Organic Olive Oil
dash of Bragg Liquid Aminos
whole grain toast or lettuce

Wash mushrooms and remove stem (save stems for soups). Place mushrooms, cap side down in an oiled pan. Broil for three minutes, about 3 inches below flame. Turn over mushrooms and broil on the other side three more minutes. Put olive oil and Liquid Aminos in each cap; broil until warm in center.  Serve on whole-grain toast or a bed of shredded lettuce.

Serves 2-4.

The popular button mushroom is the most widely used and is readily available, fresh or canned. Asian mushrooms
are also high in protein, and have greater health benefits. Shiitake, reishi, oyster, portobello, porcini, chanterelle, crimini, etc., are available dried and fresh in many whole-food supermarkets, health stores and Asian markets. Mushrooms are a delicious addition to pastas, vegetables, soups, and casseroles. They can also be used as an entrée. Experiment with different types of mushrooms in the following recipes.

BRAISED CELERY

BRAISED CELERY

2 large red onions, slice
4 cups finely cut celery
4 Tbsps Bragg Organic Olive Oil
¼ cup distilled water
shake of Bragg Sprinkle
2 garlic cloves, mince

Place onions in baking dish. Brown celery in olive oil. Combine with onions, garlic, water and Sprinkle. Cook 5
minutes, then bake in 325°F oven for 15 minutes.

Serves 6-8.

PURÉE OF MINTED CARROTS

2 cups carrots, slice
1 Tbsp mint leaves, mince
2 tsps raw honey
2 Tbsps Bragg Olive Oil

Steam carrots in steamer basket until lightly done. Purée carrots, with liquid, olive oil and honey in blender. Garnish with fresh mint leaves. Serves 2-4.

QUICK CHUTNEY

1 cup Peach Butter (see below)
1 tsp Bragg Apple Cider Vinegar
½ tsp fresh ginger, mince
¼ tsp paprika powder
1 tsp Bragg Liquid Aminos
½ tsp garlic, mince
¼ tsp mustard powder

Mix Peach Butter with Liquid Aminos and Apple Cider Vinegar. Mix in garlic, ginger, mustard powder and paprika.

PEACH BUTTER
6 lbs organic peaches or apricots
3 cups distilled water
3 tsps cinnamon powder
juice and rind of one lemon
1½ tsps clove powder
¾ tsp allspice
⅔ cup raw honey

Wash, peel, pit and quarter peaches or apricots (or other fruits desired). Cook in water slowly until soft. Put fruit through a strainer. To each cup of fruit pulp, add honey, cinnamon, cloves, allspice, juice and grated lemon rind. Cook fruit butter slowly until it is thick and clear. Pour into sterilized jars and seal.

MUSHROOM – BROWN RICE

2 cups brown rice, cook
2 red onions, chop
½ tsp Bragg Sprinkle
1 Tbsp Bragg Liquid Aminos
1 tsp nutritional yeast flakes
1½ cups mushrooms, fresh
4 oz soy cheddar cheese, grate
Egg Replacer equal to 2 eggs
Bragg Organic Olive Oil

Wash and cook rice in boiling water until tender. Wash and roughly chop mushrooms. Sauté mushrooms and red onions in olive oil and Liquid Aminos for 10 minutes, then mix in Egg Replacer with the grated soy cheese, Sprinkle, nutritional yeast, onions, mushrooms and rice. Place in an oiled baking dish.  Bake in 400°F oven for 15 minutes.

Serves 4.

BASIC GREENS

2 lbs greens of choice
shake of Bragg Sprinkle
¼ tsp Bragg Liquid Aminos
1 small onion, mince
dash of nutmeg
2 Tbsps Bragg Organic Olive Oil

Steam greens and add olive oil, minced onion, nutmeg, Sprinkle and Liquid Aminos. Serve greens and liquid in bowls.

Serves 4.

Vegetables and fruits are endowed with naturally occurring pigments called flavonoids, which, among many other health benefits, may be a natural weapon in the weight-loss dept.
