Marinated Skewers
Marinade ingredients

1/3 cup olive oil

2 tbsp lemon juice

1 tsp lemon zest

1 tbsp Dijon mustard

1 tbsp Bragg Apple Cider Vinegar

1 tbsp soy sauce
-
3 garlic cloves, minced
-
1 tsp paprika
-
1 tsp dried oregano
-
1 tsp dried basil
-
Salt and pepper to taste
Skewer ingredients

1.5 pounds chicken breast or seitan

2 small zucchini
-
1 red or orange bell pepper
-
1/2 red onion
In this recipe:
- In a bowl, mix together all of the marinade ingredients and set aside.
- Chop the chicken or seitan into 1-inch cubes, the pepper and onion into 1-inch squares, and the zucchini into 1/2 inch wide rounds.
- Add the chicken/seitan and veggies to a ziploc bag and then pour the marinade on top, making sure it covers everything in the bag.
- Marinate in the fridge anywhere from 45 minutes to 3 hours. (If using wooden skewers, soak them in cold water for at least 30 minutes.)
- Drain any excess marinade and assemble skewers with equal parts vegetables and chicken/seitan.
- Grill the skewers on medium-high heat for 5-7 minutes on both sides.
- Enjoy! Optional: squeeze lemon juice on top once finished and garnish with fresh herbs.
